Justine is 16 years old and is already changing the way people think about marshmallows.
As the founder and creative heart of The Marshmallow Express, Justine does it all – dreaming up wild and wonderfully unexpected flavors, designing every piece of artwork, and making sure each product meets her exacting standards before it ever reaches a customer. Sweet, spicy, or somewhere delightfully in between, her flavors are never ordinary and always an adventure.
Justine’s creative vision extends beyond the kitchen. Every design, every detail of our visual brand exists because of her – including Sydney, the candy-colored locomotive she imagined and brought to life.
From the beginning, Justine made a conscious choice to do things differently. All of her products are made with clean ingredients and all-beef gelatin – halal-friendly and inclusive by design – because she believes everyone at the table deserves a seat. Even the way she cuts her marshmallows and Boxcar Bites into shareable squares is intentional. Food is always better when it’s shared.
She also personally oversees our taste testers, fine-tuning every flavor until it’s exactly right. Because good enough has never been good enough for Justine.
One day, Justine’s marshmallows will be on supermarket shelves across the country – so that everyone, everywhere, can enjoy a marshmallow made without compromise. She’s just getting started.

Every great creative mind needs someone who believes in them before they believe in themselves. For Justine, that person is mom.
It was Cynthia who first noticed the spark in Justine and encouraged her to turn a fundraiser for a school trip into something greater.
Steady, strategic, and ready to build – she is the hand behind the scenes that turns ideas into reality. While Justine pushes boundaries, Cynthia grounds the vision – researching trends, sourcing ingredients, finding the right markets, and keeping operations running smoothly.
Two halves of the same dream, moving in the same direction.
More than anything, she is Justine’s vision keeper. The one who holds the big picture so Justine can focus on what she does best – creating, designing, and imagining what comes next.

About Bill: The Unsung Hero of Our Business
Meet Bill—dad, paperwork guru, and the ultimate roadie! While he may not always be the one you see front and center, Bill is an essential part of our team, making sure everything behind the scenes runs smoothly and efficiently.
From keeping the business legally compliant to overseeing insurance and taxes, he ensures that all the paperwork is in order. His attention to detail and expertise in these areas allows the rest of the team to focus on the fun stuff like creating new products and connecting with our customers.
When it comes to our events and markets, Bill is the person who keeps everything running like clockwork. He’s in charge of all our equipment, ensuring it’s ready and in perfect working order for every event. On event day, Bill is the one loading up the van and making sure we’re fully equipped and ready to go. From the initial setup to the final break-down, Bill is there every step of the way, handling the logistics and doing the heavy lifting, making sure we have what we need to make a great impression.
While Bill may not be the first person you see, his practical skills, steady support, and hard work behind the scenes are vital to making sure everything runs without a hitch, enabling Justine to focus on the creative direction of the business and growing The Marshmallow Express brand, allowing her to get closer to her dreams.
